- Take For the Khichdi*
- Make ready 1 cup Red Matta (Kerala) rice
- Get 1 cup Whole Green Moong
- Prepare 1 inch Ginger piece, finely chopped
- Prepare 2-3 Green chillies, slit lengthwise (adjust as per taste)
- Get 1 teaspoon Cumin seeds
- Prepare 8-10 cashews, halved
- Make ready 2 tablespoons Ghee
- Take to taste Salt
- Take Handful coriander leaves, finely chopped (for garnish)
- Prepare For the Sasam*
- Take 1 Mango, cubed
- Make ready 10 Litchis, peeled & pitted
- Make ready 1 cup Green seedless grapes, halved
- Get 1.5 teaspoons Mustard seeds
- Prepare 4-5 Dry Red chillies (adjust as per taste)
- Get 1 small ball of tamarind, soaked in warm water
- Get 1 cup fresh grated coconut
- Prepare to taste Salt
- Get 5-6 Tulsi leaves (for garnish)
Khichdi is basically prepared with rice and lentils. At my home khichdi was made just with rice and moong dal. Adding a few vegetables with spicy tomato seasoning makes khichdi a complete meal. Recipe Khichdi in the pressure cooker made with rice and split green mung beans.
Instructions to make Ironman khichdi with mixed fruit sasam:
- Soak the red rice & moong for 2-3 hours. Drain off the water just before you start cooking.
- Heat the ghee in a pressure cooker. Add the cumin seeds. When they change colour, add the ginger & green chillies. Stir for a minute. Add the cashews & stir for another minute.
- Add the moong & rice, specifically in that order, since soaked red rice has a tendency to papaya when added to hot fat. Saute for 2-3 minutes.
- Add 6 cups of water…and salt to taste. Stir well.
- Close the pressure cooker lid & cook for 1 whistle on high heat. After 1 whistle, lower the heat & cook for 10 more minutes.
- Turn off the cooker & let it rest for 10-15 minutes. In the meantime, let's whip up our Sasam.
- Extract the pulp from the soaked tamarind (You may also use a teaspoon of readymade tamarind paste instead).
- Blend together the mustard seeds, red chillies, tamarind pulp & coconut into a very fine, thick paste, using very little water. The consistency is important.
- Add water…a little at a time…stirring it continuously, till you get a thin, but not watery consistency. Add salt to taste (a little less than you would add to a regular gravy).
- Arrange the fruit segments in a serving bowl. Garnish with some fresh tulsi leaves. Top it up with the mustard gravy. The Sasam is ready.
- Garnish the khichdi with finely chopped coriander leaves.
