- Take 1.5 kg Pork Belly with Skin

- Preheat your oven to 230°C
- Score the skin on the pork belly so it penetrates the fat a bit
- In a pestle and mortar/ spice grinder, pound together the coriander seeds, Fennel seeds, black peppercorns, salt and bay leaf.
- Mix the dry rub with the oil and lather onto the pork belly. Make sure to get some mixture into the cuts you made on the skin. Place into a dish and cover with cling film to marinate for a minimum of 30 minutes in the fridge.
- Chop 2 onions into quarters and 1 garlic head in half horizontally. Lay them on the base of the baking dish skin side facing up. You do not need to remove any skins.
- Place the pork on top of the onions and garlic and place the dish into your preheated oven for 45 minutes- 1 hour.
- Take out the pork belly when it is crispy and golden. Then turn the oven down to 150°C.
- Place the pork belly onto a rack suspended above a tray so that the pork fat will drip down through the meat and into the tray. Leave it in the oven for 2-3 hours and let it cook slowly until the meat is soft and tender.
- Enjoy with sides of your choice. The pan with the pork fat, onions and garlic can be used to make gravy.
