Instructions to make Sig's Cucumber and Melon Cooler:
- Cut the melon into half short way across to make a round bowl when empy. Scoop out he flesh and set the empty halves aside
- Cut the cucumber and scooped out melon into small chunks, remove seeds from cucumber and melon if you like
- Now mix all the other ingredients one after the other in a separate bowl to make a dressing
- Chop and add the mint if using gently fold into the cucumber and the melon. Add the dressing and again fold under gently .
- Cut the cheese into small cubes and sprinkle over top if you are using it
- Chill for 10 to 15 minutes
- Serve in set aside empty melon shell, this makes four small servings.
