- Place fish on flat oven proof dish. Rub melted garlic and butter mixture into fish, coating both sides.

- Put under grill (relatively close to element but not too close) and grill for 8 - 10 mins.
- Transfer fillets to a clean oven dish whilst reserving juices. Sprinkle fresh lemon juice onto fillets.
- Add the tablespoon of white wine to reserved juice, stir in and pour 3 - 4 tbs over fish.
- Put fish back into oven at 200° Celsius for another 5-8 mins.
- Serve on a bed of basmati rice, accompanied by steamed veggies and topped with a grilled slice of Haloumi cheese.
- Enjoy with a glass of Chenin.
