- preheat over to roast brinjal
- chop onions/ shallots
- chop chillies
- pound the garlic cloves roughly

- now untl it all turns golden, peel off the roasted brinjal and mash it up with a pinch of salt and few drops of mustard oil
- add the mashed brinjal to the fried
- add tomatoes, cover and cook
- after 3 mins, add the garam masala and keep stirring
- now add the half cup coconut milk to the pan
- let it simmer, cover it all
- now add salt to taste and cover it until the coconut milk is all absorbed
