Steps to make Kerala Chicken Roast:
- Cut the chicken pieces into small bite sizes.
- Marinate the chicken pieces with some salt, pepper,turmeric and lemon juice for half an hour.
- Take a large saucepan and heat some oil.
- Once the oil is hot, on medium heat add mustard seeds and cumin seeds.
- Add curry leaves as the seeds sputter in oil.
- Saute the shallots, onion slices,green chillies, a pinch of turmeric and ginger garlic paste till they turn golden brown.
- Add a pinch of salt for fast sauteing of onions.
- Now put chilly powder,garam masala and pepper.Add 1 tbsp of water and cook until the raw taste of spices gone. Now your masala is done.
- In another pan,heat some oil and shallow fry the chicken pieces till they become lightly brown.
- Put the fried chicken pieces to the sauteed onions and mix well.
- Since we want a dry chicken dish,cook everything on medium heat till oil separates and onions turn brown as in the picture.
- Check the salt and serve hot,garnished with some cilantro.
