- Get Saradine / Chala (Well cleaned)
- Make ready Green chilli
- Make ready Ginger Garlic – paste
- Get Cheru ulli
- Get Tomato
- Get Curry leaves
- Take Chili powder
- Take Turmeric powder
- Make ready Pepper powder
- Get Coconut oil
- Make ready Salt . as per taste
Spicy and delicious Kerala style Sardine curry. Heat oil in a manchatti /pan,add mustard seeds and let it splutter. Next add ginger,garlic,shallots and curry leaves. Saute until it turns golden brown.
Steps to make Traditional kerala chala (Saradine) curry:
- Heat a kadai. Pour Oil into it. When oil turns hot add the Cheru ulli and ginger – garlic paste. Nicely sauté till raw smell goes.
- Then add the chopped chillies & sauté till the shallots become tender.
- Add Chili powder, turmeric powder, curry leaves & little salt. Nicely sauté for 2mins.
- Then pour 3cups water & allow the mix to boil.
- When it starts boiling, add the soaked tamarind, pepper powder & adequate salt.
- Then add cleaned saradine/ chala & low flame & cook till water is evaporated to half.
- Don’t use ladle to stir the curry as it will break saradines. Instead you can lift the kadai & rotate it in clockwise & anti clock wise direction.
- Add the tomato's nicely cuted
- Remove it from flame & garnish with few curry leaves.
Next add ginger,garlic,shallots and curry leaves. Saute until it turns golden brown. Reduce the flame to low and add turmeric powder ,kashmiri chili powder and fenugreek. This signature dish of Kerala features sardines in a deliciously spicy and tangy sauce flavored with tamarind.
