Steps to make Lazy Man Burrito:
- preheat over to 350
- preheat pan at medium heat
- in medium mixing bowl put 1 1/2 cans of corn with half a can of enchilada sauce seal and put in the fridge
- when the pan is heated put diced mushrooms and onions. cook till onions are almost clear. add 1/2 cup of heavy cream
- reduce heat let simmer and liquid cook down. cook for 10 min.
- add ground beef or chicken to the mix cook thoroughly
- in medium pan slightly grease and heat up tortillas. 30 sec on each side should do it. cut the stack of heated tortillas in half
- in a small pot heat the refried beans.
- while the beans are heating grab another bowl add remainder of enchilada sauce to mixing bowl and the heavy cream mix completely and put in fridge
- cook yellow rice as directed on the box or bag.
- now start layering components like a lasagna. adding a decent amount of the heavy cream/ enchilada sauce and cheese.
- cover pan with aluminum foil and bake for 30 min
- after the 30 min remove aluminum foil and bake for another 30 min
