- Clean the chicken wings and add the lemon juice
- Take the ginger and garlic, and grind them manually using the mortar or you can also use blender
- Add all the dry seasonings and mix it until it becomes fine paste
- Marinate the chicken with this paste and add oyster sauce, once it's evenly distributed, cover the bowl and keep it in fridge for 2-3 hours
- After 2 or 3 hours, place the pot on the stove on medium heat. Add some oil
- Get the chicken from the fridge, put it in the pot and cover it
- Let it cook for about 10mins, the water will automatically come out from the chicken, no need to add water in this stage
- Check once is a while, don't let it burn when simmer. And flip the chicken if required, to get uniform colour on the skin, then add 150ml water
- Chicken will get soften and fully cooked once the water is dried up
- Once the chicken is cooked and the sauce becomes caramelized, you can remove the cover and let the water completely gone whilst flipping the chicken one by one
- Remove from the pot once you get the desired colour of the chicken wings, serve it with fries or rice. Enjoy!
