The ingredients needed to make Mentaiko Potato Salad:
- Make ready 2 to 3 Potatoes
- Make ready 1 Mentaiko
- Prepare 6 tbsp Mayonnaise
- Prepare 2 tbsp Plain yogurt
- Make ready 1/4 Carrot
- Take 1 Cucumber
- Prepare 1 tsp Soy sauce
- Make ready 1 dash Pepper
- Take 1 Loose leaf lettuce, cherry tomatoes
Instructions to make Mentaiko Potato Salad:
- Wash the potatoes well, then boil for 10 minutes with the skins on. This will make them more delicious. When a skewer can easily pass through, they're ready!
- If you use a microwave, it's even easier. Wrap the damp potatoes up in plastic wrap and heat for about 5 minutes.
- Peel the potatoes while still hot to cleanly peel. It's hot, so wrap them up with paper towels while you work.
- Mash the potatoes. Use an egg cutter like in the picture to make it easy.
- Mash the potatoes well, but don't knead. Let cool, then add all the seasoning ingredients.
- Slice the cucumbers, sprinkle with 1 teaspoon of salt, and let sit for about 10 minutes. Squeeze well to remove the excess moisture. Peel the carrots, thinly slice, and boil for 3 minutes.
- Peel and squeeze the mentaiko (here's one fish's worth shown in the photograph).
- Squeeze the cucumbers well, then add to the potatoes. Add the mentaiko and carrots as well and toss gently.
- Transfer to a plate with some loose leaf lettuce. Garnish with cherry tomatoes and serve.

These foods are easier to digest than others which helps promote a rise in your sugar levels which in turn takes your mood to a happier place.
