Steps to make Buttered Jollof Rice:
- Wash and parboil rice
- While that is cooking, slice onions. I already had my snails parboiled with onions, pepper, salt and seasoning.
- Put a table spoon scoop of cooking butter in a pan, wen melted and hot, add the time and then sliced onions, stir fry for about 3mins, it doesn't fry as fast as veg oil, after then add the remaining bottom pot stew and pepper and stir together, allow to fry for few mins and add seasonings to make taste sharper, a bit of curry stir for a min and add the snail stock, allow to boil while you wash the boiling rice
- Add the buttered stew into the washed rice, mix them together evenly and add hot water for it to boil quickly. Taste that everything is appropriate then allow to cook together till dry.
