  1. Take 3 glasses rice
  2. Get 3/4 kg Prawns (peeled, cleaned, deveined)

  16. Prepare 1 1/2 tbsp chilli powder
  17. Take 1/2 tbsp turmeric powder
  18. Get 1 1/3 tbsp coriander powder
  19. Prepare 1 tbsp cumin powder
  20. Make ready 1/2 tbsp garam masala (optional)
  21. Make ready 1/2 tbsp dried Fenugreek/ kasuri methi (optional)
  22. Prepare As needed - rock salt
  23. Prepare For Vegetables-
  24. Prepare 2 onions
  25. Take 2-3 green chillies
  26. Make ready 1 inch ginger
  27. Prepare 5-6 garlic cloves
  28. Prepare As needed - coriander leaves
  29. Make ready As needed - mint leaves

Heat oil in a frying pan and fry the prawns lightly on both sides on a medium heat till golden. This is a simple pulao made from fresh prawns. But let me tell you the taste of this recipe cannot be described in words. It is a simpler version of prawns pulao.

Instructions to make Prawn pulao:
  1. Soak rice in water for half an hour
  2. Cut the vegetables. Make the ginger-garlic paste.
  3. Heat oil and ghee in a pan.
  4. Add spices. Cook for half a minute. Add onions and green chillies. Cook until the onions become translucent.
  5. Add ginger-garlic paste and pepper.
  6. Wait until the onions brown /caramelise. Add salt,turmeric, chilli powder. Mix thoroughly. Let it cook for 2 minutes.
  7. Add mint. Cook for a minute. Add coriander and cashew nuts. Cook until the cashews brown a little.
  8. Add the prawns. Mix carefully without breaking them. Cook for 1 minute (until they start to become slightly C-shaped)
  9. Add cumin powder, coriander powder, garam masala, dried Fenugreek. Mix well.
  10. Add water(1:1.5 ::rice:water). Put a lid on it until it starts to boil. Taste the water to check for salt and spice.
  11. Drain the rice thoroughly.
  12. Once the water boils, add the rice. Mix carefully.
  13. Cook it in a pressure cooker for 15 minutes on low flame.
  14. Mix and serve. Garnish with lemon and onions.

But let me tell you the taste of this recipe cannot be described in words. It is a simpler version of prawns pulao. Light spices and cashews gives this pulao an amazing flavor and taste. T he inspiration of this Prawn Pulao came from Mishmash's CheMmeen Biryani. I call it "CheenMeen" which sounds so lyrical that it is hard to get it out of my head.
