  1. Wash plantain, peel, place in a pot of water and set to boil (add salt if you want).
  2. Wash and cut pumpkin leaves, carrots, fresh tomatoes, red chilli pepper, scotch bonnet, and onion.
  3. Wash fish thoroughly, place in a clean pot, add seasoning and cook till fish is properly cooked.
  4. Heat oil in a sauce pan, add sliced onion. Stir for 10seconds and add chopprd tomatoes, red chilli pepper, scotch bonnet, and cook for 3 minutes.
  5. Add chopped carrots and stir for 2 minutes. Add seasoning cube and salt to taste. Stir well.
  6. Add fish stock to the mixture, add fish, add chopped vegetables. Stir well
