- Heat the 2 tbsp oil in a 4.5qt or larger Dutch Oven over med heat. Add onions and peppers and cook for about 2 minutes.
- Add ground beef and break up with a wooden spoon. cook until no longer pink. drain grease if you did not use a lean beef. add minced garlic and stir for 1 min more.
- Add all your spices and tomato paste. stir to incorporate and cook for about 2 minutes. add better than bouillon and stir until dissolved.
- Add bottle of beer and sommer for 2 minutes.
- Add both cans of diced tomatoes.
- Simmer covered for 1 hour on low heat.
- Serve and top with favorite garnishes.
