  3. add the green onion, salt and pepper
  4. whisk egg and onions until they are mixed well
  5. preheat a medium size pan to med-high heat
  6. scramble egg mixture until cook through about 3-5 min
  7. set cooked eggs aside
  8. turn electric griddle to 275
  9. place 2 flour tortilla shells on griddle side by side
  10. sprinkle 1/3 c cheese on each shell
  11. next evenly contribute turkey crumbles on both flour tortillas
  12. evenly spread cooked egg mixture on both shells as well
  13. top each shell with an additional 1/3 c cheese each
  14. place to other flour tortillas on top to form a (sandwich)
  15. lightly cover griddle with tin foil to assist with keep in heat and heating through insides of quesadilla
  16. cook til slightly browned on one side about 3-5 min
  17. then flip and repeat
  18. serve with sour cream and hot sauce
