  6. Take 1 sour cream (any kind)
  7. Make ready 1 OPTIONAL: diced tomatoes, jalapenos
Instructions to make Easy Zesty Quesadillas:
  1. Warm fajita meat in 10' or bigger skillet. Just heat them do not make steaming hot. Place meat in a seperate dish when done. Do not rinse skillet.
  2. Take 2 medium or large tortillas. Lightly butter face down side and lighty spread sour cream on inside and place butter side down on plate.
  3. Add desired amount of shredded cheese on the tortilla. Space envenly fajita meat and add some cheese on top. [The cheese keeps the quesadilla together.]
  4. Spread sour cream on second tortilla then place on the quesadilla. Lightly butter the top of the second tortilla.
  5. Set skillet on medium high and let warm. Put a tbl spoon of butter in skillet. Move skillet around to melt butter and coat the skillet.
  6. Place quesadilla in center of skillet. Let sit 1-2min or until bottom tortilla has that cooked stiffness. Flip quesadilla and repeat. Continue until quesadilla has a golden brown color. (like toast)
  7. Cut with pizza cutter and serve.
  8. OPTIONAL: Add light coat of sour cream to top of finished quesadilla. Put desired amount of taco bell sauce on top as well.
  9. SIDE NOTE: Diced tomatoes would be added when you put the meat on the first tortilla. Jalapenos can be added then or when the quesadilla has been cut.
