- Make ready 1/4 tsp Fenugreek Powder
- Prepare 1/2 tsp Cumin Powder
- Make ready 1/4 tsp Kashmiri Red Chilli Powder
- Take As per taste Salt
Steps to make Moru Curry (Kerala Style Seasoned Buttermilk):
- Whisk curd with water and keep aside. I like it thick so I used less water. You can use according to your requirement.
- Heat oil in a pan. When the oil is hot, add mustard seeds, fenugreek seeds and cumin seeds. Let them splutter for a few seconds.
- Add chopped garlic and fry for few seconds.
- Add chopped ginger and again fry for few seconds.
- Add green chillies (slited halfway).
- Add shallots and fry till slightly brown.
- Now add all the masala powders ie. turmeric powder, cumin powder, fenugreek powder, red chilli powder and salt. Fry for few seconds and switch off the heat.
- Add the whisked curd and mix well. Switch on the heat and cook the curry on low heat till it gets slightly hot. Do not let the curry boil. Keep stirring continuously. Switch off the heat.
- Serve Moru Curry with plain steamed rice and South Indian papad and any side dish.
