- Prepare 1 " Cinnamon Stick
- Make ready 3 Cloves
- Make ready Few Peppercorns
Instructions to make Kerala Ghee Rice (Malabar Ney Choru):
- Soak basmati rice for atleast 15 minutes before cooking.
- Heat ghee in a pan. Fry the cashewnuts till golden brown. Keep aside.
- In the same pan, fry sliced onions till golden brown. Keep aside.
- In the same pan, add ghee if needed. Add the bay leaf, cinnamon sticks, cardamoms, cloves and peppercorns and fry for a minute. Add ginger and fry it also for a minute. Add the sliced onions and fry till it becomes translucent.
- Drain the water completely from the rice and then add the soaked rice to the pan. Add 1 tsp ghee and fry for a minute.
- Now add salt and water. Mix well. Close the lid and cook the rice till done.
- Once the rice is done, garnish it with cashewnuts and fried onions. Serve hot.
