Instructions to make Kerala Chicken Roast:
  1. Grind everything under 'To Grind' into a coarse paste. Use half of this paste to marinate the chicken. Keep it for 30-60 mins.
  2. Shallow fry the chicken pieces in 3 Tbsp Oil  in a non stick pan until both sides are light brown. Transfer to a pressure cooker.
  3. To the same pan add rest of the oil and saute Onion and curry leaves until onion turns light brown
  4. Lower the heat and add rest of the paste from step 1. Saute until raw smell goes away and it becomes brownish black in color.
  5. Add the above mixture to the chicken waiting in pressure cooker.  Add 2 cups of water. Wait for 3 whistles. Let it cool down.
  6. Transfer the contents to the pan and let the gravy thicken.
  7. Once its almost dry, add the coconut milk.
  8. Switch off the flame. Sprinkle the items under 'To Garnish'. Close the lid and rest it for 30 mins.
