  2. Take 1 cup cheakpeas/Kabuli chana
  3. Prepare handful coriander leaves
  4. Get 1/2 tsp coriander powder
  5. Get 1/2 tsp cumin powder
  6. Prepare to taste Salt
  7. Get 1/2 tsp chilli powder
  8. Take 1/2 tsp black pepper powder
  9. Make ready 2 tbsp maida / refined flour / plain flour
  10. Take As needed Oil for deep frying
  11. Take 1/2 tsp lemon juice
  12. Get 1/4 tsp baking soda
  13. Prepare Hummus
  14. Prepare 120 gm cheakpeas
  15. Prepare 3 tbsp sesame Seeds
  16. Prepare 4 tbsp olive oil
  17. Take 1-2 spoon lemon juice

Split the pitta bread in half and fill the pockets with the mixed salad. Tuck three to four falafel into each pitta, top with a little hummus sauce and serve with lemon wedges. Instructions to make Pitta bread with Falafel and Hummus:
  1. Firstly soak one cup of cheakpea with enough water overnight
  2. Next day drain the water and Transfer to the bowl
  3. Also add fistful coriander and 1/2 coriander powder, 1/2 cumin powder, 1/2 chilli powder, 1/2 pepper powder, lemon juice and salt to taste
  4. Additionally, add in 2 tbsp maida
  5. Blend it coarsely in a food processor without adding any water.
  6. Add baking soda and mix it well
  7. Now wet your hands and prepare small sized balls. If the dough is sticking then add a tbsp more of maida
  8. Deep fry that balls in hot oil
  9. Once the Falafel turns to golden brown, drain off on to the kitchen paper
  10. Finally, falafel is ready to serve. Enjoy this with hummus and for more taste enjoy with pitta bread.
  11. So now for the hummus, rinse 120 gm cheakpea in water first and then soak with enough water overnight.
  12. After the soaking cheakpeas will double in size and volume.
  13. Next day, rinse the cheakpeas with water first a couple of times
  14. Drain all water and add cheakpeas in pressure cooker then add 1/2 tsp salt and pinch of baking soda.
  15. Add 1.5 cups of water and keep the pressure cooker on a medium flame for 10 to 12 minutes.
  16. When the pressure settled down on it's own in the cooker, remove the lid and check the cheakpeas
  17. Mash them with spoon or with your fingers. You should mash them completely. They should have no rawness in them
  18. Now heat a small pan and keep the flame low. Add sesame seeds in that pan.
  19. On a low flame stiring often roast sesame seeds
  20. Roast till they become crisp.
  21. Now main part of making hummus. In mixer grinder take the roasted sesame seeds
  22. Powder it to semi fine texture.
  23. Add 1 or 2 spoon of lemon juice it will give you more tangy taste.
  24. Add 4 table spoon of extra virgin olive oil and little bit salt as we have already boiled the cheakpeas with salt.
  25. Blend it in fine consistency. Now add cooked cheakpeas into that mixture.
  26. Grind it till smooth and light.
