How to Prepare Hot Tofu (Yudofu). This dish is unbelievably easy and the only ingredients you need are just kombu and tofu. Just make a savory umami-rich broth using kombu and then add some tofu. Japanese hot tofu is nourishing, comforting, as well as quick and easy to prepare.

The ingredients needed to make Hot Tofu (Yudōfu):
  1. Get 500-600 g ‘Momen’ Tofu *medium soft type, cut into large pieces
  2. Get Water
  3. Take 5 cm Kombu (Kelp) *optional
  4. Get <Sauce>
  5. Prepare 4 tablespoons Soy Sauce
  6. Make ready 2 tablespoons Mirin
  7. Take 2 tablespoons Sake (Rice Wine)
  8. Take 1 sachet (2.5 g) Katsuobushi (Bonito Flakes)
  9. Get 1 Spring Onion *finely chopped

This is also a perfect vegetarian dish. Basically, the idea is to make stock using dashi kombu, and then throw some tofu in. Of course you are welcome to add any vegetables. Give our recipe for Hot Tofu or Yudofu a try for a simple and wholesome meal.

Steps to make Hot Tofu (Yudōfu):
  1. Place Water and Kombu in a pot, gently place Tofu, and add more Water just enough to cover. Slowly heat over medium heat. When started boiling, it’s ready to serve. *Note: Do not boil Tofu for too long.
  2. Meanwhile, make Sauce. Heat Soy Sauce, Mirin and Sake (Rice Wine) in a saucepan over medium heat, and bring to the boil. After gently boiling for 1 minute, add Katsuobushi (Bonito Flakes) and remove from the heat. Add Spring Onion.
  3. Pick up Hot Tofu using a slotted spoon or small skimmer, and enjoy with the Sauce. *Note: You may wish to add Shichimi (Japanese Chilli Spice Mix) and grated Ginger.

Of course you are welcome to add any vegetables. Give our recipe for Hot Tofu or Yudofu a try for a simple and wholesome meal. Transfer the cut tofu in to bowls and pour in some of the stock. Top with katsuobushi and cut some kombu for extra taste. Literally translating to "hot water tofu," that's essentially all there is to it.

Cold water fish are excellent if you wish to be in a better mood. Cold water fish like tuna, trout and wild salmon are rich in DHA and omega-3s. DHA and omega-3s are two things that really help the grey matter in your brain run a lot better. It’s true: chomping on a tuna fish sandwich can really help you overcome depression.

Grains can be great for fighting a terrible mood. Barley, millet, quinoa, etc are terrific at helping you feel happier. They help you feel full too which can really help to better your mood. Feeling starved can be a real downer! These grains can elevate your mood because it’s not at all hard for your body to digest them. These foods are easier to digest than others which helps promote a rise in your sugar levels which in turn kicks up your mood to a happier place.

Green tea is truly great for your mood. You knew it had to be in here somewhere, right? Green tea has a lot of an amino acid called L-theanine. Research has proved that this amino acid promotes the production of brain waves. This helps improve your mental sharpness while having a relaxing effect on the rest of your body. You already knew green tea could help you be healthier. And now you are aware that green tea can help raise your mood also!

So you see, you don’t have to turn to junk food or foods that are bad for you so you can feel better! Try a few of these instead!
