  13. Drain.
  14. Rinse well.
  15. Add to boiling water.
  16. Cook until the color changes to a deep red. About 2 to 3 minutes.
  17. Remove crayfish immediately from water.
  18. EATING CRAYFISH: With your hands, break in two sections. (optional: Top part consume juice /flesh and then discard)
  19. Bottom section peel off one side of the shell.
  20. Should slip out.
  21. Peel off back and remove sand vein.
  22. Dip in lemon oil sauce or drizzle with lemon juice.
